Das Ziel dieser Ar-beit war es herauszufinden, ob sich das Wohlbefinden in der Gastronomie durch Duft-marketing steigern lässt. Die Forschungsfrage lautet: Welche Auswirkungen hat der Einsatz eines Raumduftes auf das Wohlbefinden der Gastronomiekundschaft?Im ersten Schritt wurde das Thema physiologische- und psychologische Geruchswahrnehmung, sensorisches Marketing, Duftmarketing und Wohlbefinden theoretisch behandelt. Mit den Erkenntnissen aus der Theorie wurde ein Spezialisteninterview ge-führt. Das Spezialisteninterview hat sich mit der Thematik des Duftmarketings in der Gastronomie im Detail beschäftigt. Dafür wurden zwei unterschiedliche Düfte definiert. Während es sich bei dem ersten Duft um einen typischen Duft für die Gastronomie handelt, ist der zweite Duft für die Beduftung in der Gastronomie unpassend bzw. untypisch. Nach dem Spezialisteninterview wurde ein Experiment mit drei Gruppen durchgeführt. Die ProbandInnen wurden an jeweils drei unterschiedlichen Tagen in ein Gasthaus nach Lichtenwörth eingeladen. Dort wurden sie mit einer Kleinigkeit zum Essen verköstigt und mussten anschließend einen Fragebogen zum Thema Wohlbefinden ausfüllen.1.Gruppe: Hier handelte es sich um eine Personengruppe mit 30 Leuten. Der Raum war unbeduftet.2.Gruppe: Hier handelte es sich ebenfalls um eine Personengruppe mit 30 Leuten (andere Personen wie in Gruppe 1). Der Raum war mit einem typischen Gastronomiegeruch beduftet (Duft: Orient Express).3.Gruppe: Bei dieser Befragung haben ebenfalls 30 Personen teilgenommen, allerdings waren es wieder neue Personen. Sie waren weder in Gruppe 1 noch in Gruppe 2 anwesend. Hier wurde der Raum mit einem untypischen Gastronomiegeruch beduftet (Duft: Blue Wood).Das Ergebnis der Studie war es, dass sich das Wohlbefinden durch den Einsatz des typischen Gastronomieduftes gesteigert hat. Durch den Einsatz eines untypischen Duftes konnte das Wohlbefinden der Gäste verschlechtert werden. Der untypische Duft wurde von den Gästen als sehr stark empfunden. Im Gegensatz zum typischen Duft, dieser wurde weniger stark empfunden.****A wide variety of industries is still dealing with sensory marketing and therefore con-sciously rely on fragrance marketing. This applies not only to traditional retail but also to gastronomy. More and more catering establishments are opening, so that in this case the guests are also influenced by high competition. The aim of this work was to find out whether well-being in the catering trade can be increased by fragrance marketing. The research question is: "What effects does the use of a room fragrance have on the well-being of catering customers?"In the first step, the topic of well-being, physiological and psychological smell percep-tion, marketing, sensory marketing and fragrance marketing were dealt theoretically. An specialist interview was conducted with the knowledge from the theory. The specialist interview dealt with the topic of fragrance marketing in gastronomy in detail. Two different scents were defined for this. One of the scents is well suitable for using it in restaurants and the other is less suitable for it. After the specialist interview, three groups were invited to a restaurant in Lichtenwörth. It was a classic field experiment. They got something to eat and then they had to fill out the questionnaire. 1st group: This was a 30 people group. The room was unscented.2nd group: This was also a 30 people group (other people as in group 1). The room was scented with a typical gastronomy fragrance (fragrance: Orient Ex-press).3rd group: 30 people also took part in this survey, but again there were new people. They were not present in group 1 or group 2. The room was scented with an atypical gastronomy fragrance (fragrance: Blue Wood).The result of the study was that the well-being increased by the use of suitable fragrances in the restaurant. By using a unsuitable fragrance, the well-being of the guests could be worsened. Unsuitable smells was felt strongly on the participants. In contrast to suitable smells.
